This multifaceted analysis not only highlights the dynamic nature of malt aging but also elucidates the nuanced way these changes manifest in the brewing process\, ultimately influencing the sensory experience of beer. \nAbout Our Speakers \nDr. Harmonie Bettenhausen \nFaculty Lecturer at the James B. Beam Institute for KY Spirits at the University of Kentucky \nDr. Harmonie Bettenhausen is a Faculty Lecturer at the James B. Beam Institute for KY Spirits at the University of Kentucky and the consulting Director of the Hartwick College Center for Craft Food & Beverage. She leads research and testing in grains\, malts\, beer\, spirits\, dough and breads. Dr. Bettenhausen earned her Ph.D. from Colorado State University\, specializing in omics-based research and biochemistry of small grains. Her publications cover topics such as metabolomics\, peppers\, wheat and chocolate. She is dedicated to providing exciting learning experiences for students and advancing research in food and beverage sciences. Dr. Bettenhausen also actively participates in industry-adjacent committees\, including the American Society of Brewing Chemists and the Master Brewers Association of the Americas\, where she contributes her expertise to advance industry standards and practices. In her dual roles\, she bridges academic theory and practical application\, benefiting both students and industry practitioners. \n  \nDr. Glen Fox  \nAnheuser-Busch Endowed Professor of Brewing Science at the University of California\, Davis \n Dr Glen Fox worked for the Queensland Department of Agriculture\, Australia\, from 1986 to 2010. After completing his PhD in 2008\, he was he was a Post- Doctoral Fellow at Stellenbosch University in South Africa during 2008 and 2009. In 2010\, he was appointed to the Senior Fellow at the University of Queensland (a global top 5 university in agriculture). In 2019\, he was appointed the Anheuser-Busch Endowed Professor of Brewing Science at the University of California\, Davis being only the 3rd Professor in the program since it started in1958. Some of his current research focuses is on starch and protein structure and their impact on grain\, malt and beer quality and how a range of ‘omics technologies can provide a deeper understanding of quality. In 2018\, he was Elected a Fellow of the Chartered Institute of Brewing and Distilling\, the oldest professional brewing society which started in 1886. In 2022\, he received the outstanding service award from the UC Davis Continued Professional Education program. Professor Fox has adjunct positions at Stellenbosch University\, South Africa\, the University of Queensland\, Australia and Nara Institute of Science & Technology\, Japan. Professor Fox has published one book\, one interactive virtual book\, and one edited book. He has 16 book chapters and over 120 peer-reviewed journal articles. He has been on numerous industry webinars and podcasts. In 2024\, Professor Fox was elected to the Craft Maltster Guild Board of Director. DESCRIPTION:HISTORY\, DIVERSIFICATION AND INNOVATION  – \nThe Coopers Brewery Story \nFamily-owned Coopers Brewery has been brewing beer in Adelaide\, Australia for over 163 years\, and although modest in size\, is the largest Australian owned brewery.  Over its operating history the brewery has faced many challenges which has prompted diversification to survive and now boasts the unique combination of ale and lager brewing\, a maltings\, malt extract and homebrew kit production and more recently the addition of whisky distilling and a world class visitor centre.  \nThis presentation will introduce Coopers Brewery and give an overview of our maltings business\, before delving into a couple of quite unique technical aspects of our operations.  Our pre-steeping set up and kiln gas reduction through waste heat scavenging.  The pre-steeping provides a quality improvement as well as the opportunity to reduce water use\, and the kiln gas reduction provides a financial benefit and improved sustainability. \nAbout Our Speaker  \nDr. Doug Stewart  \nCoopers Brewery  \nRegency Park\, Australia  \nDoug graduated from the University of Sydney with a degree in Agricultural Science and a PhD. He completed post-doctoral studies at Michigan State University and the University of Adelaide involved with starch metabolism and the impact of malt quality on beer filtration\, respectively. Doug joined Adelaide malting Company\, Coopers maltings\, in 2000 as Quality Manager and progressed to General Manager Technical undertaking a range of duties over 15 years\, including production\, research and responsibility for the technical aspects of the maltings. Doug then moved to Coopers Brewery in late 2014 as Quality Manager and subsequently moved into the position of Maltings Manager upon the completion of the $M65 maltings project. He is responsible for all aspects of procurement\, operations and sales and marketing. DESCRIPTION:Thursday\, August 22 | 1:00 PM – 2:00 PM EST\n  \nInsights from the 2024 U.S. Barley Crop\nThis presentation will dive into data from the USDA NASS Small Grains Summary\, paired with how markets and weather impacted the crop harvested. It will also explore the landscape of variety development and improvement\, and what maltsters can expect on the horizon.  \n  \nInsights from the 2024 Canada Barley Crop\nThe 2023 seeding\, growing and harvest season was a rollercoaster for farmers and the western Canadian grain industry.  Agriculture and Agri-Food Canada’s April 30th drought monitor report showed the entire Prairie growing region in moderate to extreme drought conditions\, however in early May the prairies received wide spread rains with moisture continuing regularly through June.  With cautious optimism in the air\, the taps turned off at the end of June and temperatures turned hot through most of the month of July\, resulting in early seeded crops in particular taking the brunt of the impact with yield and quality losses evident by early August in some regions.  As a result\, quality is highly variable in the 2024 malting barley crop in western Canada with some areas having low yields\, high protein content\, thin kernels and low test weights\, while other areas harvested barley with very good yields and quality. \n  \nAbout Our Speakers\nAshley McFarland\nVice President & Technical Director:\nAmerican Malting Barley Association \nAshley McFarland serves as the vice president and technical director for the American Malting Barley Association\, a trade organization representing maltsters\, brewers\, and distillers working towards the betterment of the U.S. malting barley crop and associated industry. In her role\, she supports communications and membership efforts\, along with management of the Quality Evaluation Program\, which seeks to bring improved malting barley varieties into the supply chain. She also serves as the executive secretary for the National Barley Improvement Committee that supports barley growers\, researchers\, and industry representatives to secure sustained funding for barley research and policies that support domestic malting barley production. Previous to AMBA\, McFarland held various roles in University extension programs across four states and has worked in nonprofit executive leadership. She has a B.A. in Political Science and Environmental Studies from Central College (Pella\, IA) and an M.S. in Environmental Science from Iowa State University. McFarland\, along with her husband and two children\, reside in Duluth\, MN. \n  \nPeter Watts\nManaging Director\nCanadian Malting Barley Technical Centre\nWinnipeg\, Manitoba \nBorn and raised in Winnipeg\, Peter graduated with a Master’s degree in International Relations in 1996 from Laval University in Quebec City. After working as a Market Analyst for the Canadian Wheat Board for nine years analyzing global grain markets\, in 2005 Peter moved to Pulse Canada as Director of Market Innovation helping Canada’s pulse industry create new\, valued added markets. SUMMARY:Invisible Hazards of a Malthouse
DESCRIPTION:As many of us in the malting industry may have experienced\, we are not always the most visible part of the final product. Typically\, when a customer is enjoying a pint in their favorite taproom\, the first thing that catches their eye is the shiny tanks and sophisticated control systems that the brewing team has mastered. In the same way that there is more than meets the eye when crafting a delightful foamy beverage\, there’s hidden aspects of malthouse safety that might not always be obvious. In this presentation\, we will focus on combustible dust\, confined spaces\, control of stored energy\, as well as ergonomics and slips\, trips\, and falls. Through case studies\, OSHA fine records and incident statistics we will explore challenges that our industry has seen in the past and lessons learned on how to keep our team safe. Lastly\, we will discuss where we might find these hazards\, things to look out for\, and when to consult a subject matter expert. \nBy the end of this presentation\, participants will have gained new insight in areas where low frequency\, high impact incidents occur and have a better understanding of the resources available to tackle these unique challenges. \nAbout Our Speaker \nRegional Safety Manager for Rahr Corporation\, Jeremy has been with the company’s subsidiary\nGambrinus Malting since 2018. In his current role\, he oversees the safety program for two\nmalting plants\, one trucking divison and five warehousing facilities across Canada. A resident of\nVernon\, B.C.\, Jeremy is a Red Seal Electrician and worked in that field for ten years before his\nshift into health and safety. SUMMARY:[Member Webinar] The Mysteries Behind Malt Modification
DESCRIPTION:The word “modification” is in a maltster’s vocabulary on a daily basis. In simple numbers\, we interpret the malt certificate of analysis (CoA) and look at total/soluble nitrogen ratio\, wort beta-glucan\, friability\, fine/coarse difference\, and maybe diastatic power. But those numbers don’t really describe the full story of modification\, from cell wall hydrolysis to storage protein breakdown and release of bound proteins\, to the early attacks in starch granules… all driven by enzymes. In this webinar\, the deeper science behind endosperm modification will be explored. Finally\, some challenges will be presented on how the industry deals with future grain quality and making more malt with fewer inputs.⁠ \nSpeaker\nDr. Glen Fox is the Anheuser-Busch Endowed Professor of Malting and Brewing Science at the University of California\, Davis campus. His roles include teaching undergraduate brewing courses\, as well as conducting research with graduate students. His current research focus is on cereal starch structure and its impact on wort quality\, fermentation efficiency\, and beer quality. Prior to joining UC Davis\, he was a Senior Research Fellow at the University of Queensland’s Centre for Nutrition and Food Science in Australia from 2010 to 2019. In 2018\, he was made a Fellow of the Institute of Brewing and Distilling for his research contribution to the malting and brewing industries. Dr. Fox was part of the team that wrote the new syllabus for the Institute of Brewing and Distilling Certificate in Malting course. SUMMARY:[Member Webinar] Creating a Modern Heirloom Variety
DESCRIPTION:The term “heirloom barley variety” resonates with many brewers\, conjuring visions of unique beer flavors and aromas. Maris Otter is one such heirloom. A child of ‘66\, it challenges the definition of “heirloom”\, and its reputed properties are inextricably bound with terroir (it can legally be grown only under contract in England) and process (floor malting). Maltsters and farmers may not embrace the heirloom idea as wholeheartedly as brewers – unless compensated for yield penalties and process challenges. In this panel discussion\, we will describe our voyage toward creating a modern heirloom variety – the New World Otter Lontra. Panelists will share perspectives on barley and climate change\, ongoing beer sensory analyses\, pneumatic malting vs. floor malting\, and prospects for commercialization of the variety. We will leave ample time for questions and discussion. \nSpeakers\nDr. Patrick Hayes is a Professor at Oregon State University. His research team focuses on barley – in its many forms and uses. Current research areas include the development of winter and facultative habit malting barley varieties; the many facets of winter hardiness; dissection of quantitative disease resistance; characterization and utilization of genetic diversity; stimulating local barley production; development of multi-use naked barley for organic and conventional systems; exploring the contributions of barley genotype to beer flavor; and barley quality assessment. The OSU Barley Project has released 21 varieties/germplasms\, developed 24 mapping populations/panels\, distributed approximately 22 metric tons of barley seed\, published 175 papers in refereed journals\, and authored 13 book chapters. He has taught Plant Genetics to approximately 1\,400 students: most graduate with a keen appreciation for the complexity and power of genetics. He has served as Major Professor/co-Major Professor for 36 graduate students\, mentored 11 post-docs\, and hosted 24 visiting scientists from 15 countries. \nCampbell Morrissy has been in the brewing and distilling industry since 2011\, working in facilities ranging from a small mountain town brewpub to a nationally distributed craft whiskey distillery\, and currently as the Head Brewer at pFriem Family Brewers in Hood River\, Oregon. Simultaneously he is a Ph.D. Candidate at Oregon State University under Dr. Pat Hayes in the Barley World lab. His research focuses on barley genotype contribution to malt quality and malt and beer flavor. He is passionate about continuing education and is active with the Brewers Association the Master Brewers Association of the Americas. \nScott Fisk is a Senior Faculty Research Assistant with the Oregon State University Barley Breeding Program. As the research maltster and manager of all field-based operations he is involved in all aspects of the program including disease resistance\, winter hardiness\, and end-use quality\, all with the end goal of developing better barley for better beer and spirits. \n  \n  \nDarrin Culp is Superintendent of Agriculture at the University of California Agriculture and Natural Resources Intermountain Research and Extension Center (IREC) in Tulelake\, CA.  In the past two decades\, irrigation water has become a major source of contention in the Klamath Basin.  IREC has conducted numerous studies related to farming in drier conditions but is still considered an ideal location for research related to irrigated fields and vegetable crops produced in Intermountain Region.  Annually\, the center conducts around 50 research trials related to small grains\, alfalfa\, grass hay\, potatoes\, onions\, and peppermint.  His job as superintendent is to carry out the day-to-day management of these trials by planting\, applying treatments\, harvesting\, and collecting data requested by the various researchers who have trials at IREC.  Recently\, mild winter conditions have contributed to less snowpack and limited irrigation water availability has become the new normal.  Winter grains have gained a lot of interest among basin producers since they can more readily capture winter moisture compared to spring grain types.  The Klamath Basin has a long history of producing high-quality malting barley and these factors may lead to winter barley becoming a more prominent fixture in the landscape.        \nCurtis Davenport co-founded Admiral Maltings in 2017 with Ron Silberstein and Dave McLean and is Admiral’s Head Maltster. Prior to opening Admiral\, Curtis grew organic fruits\, vegetables\, barley\, and wheat in Santa Barbara County\, CA. Curtis began floor malting inside a converted shipping container in 2013 and has been a member of the Craft Maltster’s Guild ever since. On the side\, he purchased a truck and ran his own logistics company\, moving general commodities across the United States. \nAdrian Gram spent over a decade leading operations and sales efforts for a Fortune and S&P 500 company before shifting gears to entrepreneurship and investing. A passion for craft beer and a gluten intolerance challenged her to experiment malting and brewing with gluten-free grains as a student. She founded Grouse Malt House in 2013\, a craft malting company dedicated to supplying gluten-free ingredients to the craft brewing industry. Twila is also a Founding Board Member of the North American Craft Maltster’s Guild. \nChris Tropeano co-founded Resident Culture Brewing in Charlotte\, NC in 2017 with his partners Phillip and Amanda McLamb. SUMMARY:[Member Webinar] Tasked With Terroir – One Approach To Defining Environmental Impacts On Malt Sensory and Function
DESCRIPTION:Beer styles have long been described with reference to their geographical origin. Taking a cue from brewers\, our work goes deeper by looking at how malt’s environmental origins\, specifically minerals\, can impact the final product via flavor and process. Preliminary results will be presented along with strong arguments for ionic composition as an integral piece to defining barley terroir. \nSpeaker\nHannah Turner has been involved in plant science research for the past decade\, receiving both bachelor’s and Masters’s distinctions\, and has acted as Director of the Montana State University Barley\, Malt & Brewing Quality Lab since 2016. Hannah’s research career began with the investigation of the pathways leading to starch production in plants while her current role revolves around malting and making grain starch accessible for the brewing and distilling process. MSU’s Barley\, Malt & Brewing Quality Lab performs both research and service\, providing data for the University’s Barley Breeding Program and industry members across the barley value network. Research focuses include innovative projects such as improved barley for craft malting\, barley and malt flavor\, and improved throughput analysis for breeding program selection. Hannah works closely with the American Society of Brewing Chemist’s Technical Committee\, leading the Malt Subcommittee which works to develop and streamline methodologies for malt quality analysis. Hannah also serves as chair of the Guild’s Technical Working Group\, which develops educational and practical tools for the industry. And\, yes\, that’s important\, but what about all of the other information that’s out there that pertains to a brand like trade dress\, brand consistency\, and the look and feel of brand assets? How does a brewer or maltster tell their story and protect it? John Szymankiewicz from the Beer Law Center in Raleigh\, NC\, will talk about the legal side of things. Highlights will include trademark\, trade dress and secrets\, noncompete agreements\, and nondisclosure agreements (at least in terms of brand management).  \nSpeaker\nJohn Szymankiewicz is a licensed Professional Engineer and Attorney with the Beer Law Center in North Carolina. Embarking on a second career\, John went to law school at night while juggling a demanding full-time job\, a family\, and teaching at a local martial arts school. \nWhile launching his Raleigh law practice\, John saw the need for trained\, understanding attorneys focused on their clients’ needs in some key areas. Most importantly\, this means developing an ongoing relationship\, becoming a business partner\, with clients instead of being merely a supplier of services. As such\, in this law office\, we strive to find the right solution for the client now and in the future. DESCRIPTION:Advancements in a wide range of biotechnologies are having a significant impact on the way improvements are being made to crops; whether to increase yields or to make them more resilient to stressors\, barley is no different. Given the shifting landscape of the biotechnology industry\, the American Malting Barley Association (AMBA) is hosting a webinar to develop a shared understanding of what technologies exist\, how they are being applied\, and the implications for their use. Registration is now open for this live webinar to be held on June 15th at noon CT. \nDr. Jason Walling\, a research geneticist at the USDA-ARS Cereal Crops Research Unit and director of the Barley Malt Quality Lab\, will provide an overview of the history of plant breeding through today\, including the latest advancements in gene editing. This will establish a shared lexicon of terms and approaches. He will illustrate how these technologies are being applied by showcasing some case studies on barley and other cereal crops. Dr. Fan-Li Chou\, vice president for scientific affairs and policy at the American Seed Trade Association\, will dive a bit deeper and share what regulatory frameworks overlay these technologies\, and will specifically walk through the regulations that impact the shared case studies. Domestic and international implications will be explored that lean on the markets most relevant to the barley industry. DESCRIPTION:Join Steve Hawley and Joe O’Sullivan from the American Single Malt Whiskey Commission to learn about how a group of distillers from across the country are banding together to establish\, promote and protect an entirely new category of whiskey. During the seminar\, we’ll discuss how the Commission crafted a formal definition for American Single Malt Whiskey\, what it takes to ratify that definition with the federal government\, how they’re advancing their mission in the trade and with consumers\, and what distiller’s on the leading edge of whiskey look for in malt. \nSpeakers\nSteve Hawley was part of the original team in 2010 that built the Westland Distillery brand and business from the ground up. He began his career in the advertising industry focused largely on beverage brands including Constellation Brands\, E&J Gallo\, Pabst Blue Ribbon\, Starbucks\, and Pepsi to name a few. After years of helping others realize their visions\, Steve wanted to build his own in the world of whiskey he has such a great passion for. With Westland\, he’s not only given birth to a widely respected brand but also an entirely new category of whiskey in American Single Malt. In his role as a founder and President of the American Single Malt Whiskey Commission\, he is working to establish and protect the category across the globe. \nJoseph O’Sullivan is the Master Distiller for Clear Creek Distillery\, Hood River Distillers\, and all associate brands. Before being appointed to his current role\, Joseph was first hired by Clear Creek founder Steve McCarthy in 2005 as a distillery mechanic\, barrel coordinator\, and frequent delivery driver.  Later he became an apprentice in the craft working directly under McCarthy during one of the brand’s most foundational periods.  Serving as a frequent public speaker he quickly developed a passion for whole fruit fermentation and the spirit that would later be known as American Single Malt.  It was during this time that craft spirits as an industry emerged. In 2010\, he moved to New York City where he served as a consultant to many of that region’s first distilleries and breweries and was responsible for running day-to-day operations at Greenhook Ginsmiths.  After his time in New York\, Joseph returned to the Pacific Northwest and was offered the opportunity to serve as Head Distiller and later Master Distiller for all Hood River Distiller brands while remaining headquartered at Clear Creek. Hannah works closely with the American Society of Brewing Chemist’s Technical Committee\, leading the Malt Subcommittee which works to develop and streamline methodologies for malt quality analysis. Hannah also serves as chair for the Guild’s Technical Committee\, which develops educational and practical tools for the industry. When not in the lab\, Hannah spends time enjoying Montana with her husband and three-year-old. \nJason Parker is Co-Owner and President of Copperworks Distilling Company\, a craft distillery located on the downtown Seattle waterfront. Jason began his career in the alcohol industry in 1989 helping open iconic craft brewers in the Seattle area\, including Pike Place Brewery\, Fish Brewing\, and Pyramid Breweries. Copperworks was launched in 2013 with co-owner\, Micah Nutt (a long-time homebrewing friend)\, to explore the flavor possibilities of brewing a high-quality malt-based craft beer (without hops) then distilling that into fine spirits. Besides barley-based beverages\, Jason enjoys playing bluegrass mandolin\, hiking\, and traveling with his girlfriend\, and rock climbing. \nHow Much? SUMMARY:[Member Webinar] The Deeper Chemistry of Malt Quality: Starch & Gelatinization Temperatures
DESCRIPTION:Brewers rely on starch from mostly malt to provide fermentable sugars. The fermentation doesn’t always go to plan for a range of reasons but sometimes it is because the fermentable sugar profile isn’t always the same. How does this link to malt? When considering malt quality\, the inherent grain starch properties influence the fermentable sugars\, along with starch degrading enzymes. While we can get data on the starch degrading enzymes in malt\, do we know enough about the starch properties? Most of the methodology to measure starch properties is complex\, costly\, and very time-consuming. However\, measuring starch gelatinization can provide information on the potential impact of mashing temperature on starch gelatinization and therefore the efficiency of enzymes in hydrolyzing starch to fermentable sugars. This webinar will describe the detailed structure of starch\, the interaction between starch and the storage protein\, the slight increase in gelatinization temperature from grain to malt\, the large ranges in gelatinization temperature\, and how this could impact brewers. \nSpeaker\nDr. Glen Fox is the Anheuser-Busch Endowed Professor of Malting and Brewing Science at the University of California\, Davis campus. His roles include teaching the undergraduate brewing courses\, as well as conducting research with graduate students. His current research focus is on cereal starch structure and its impact on wort quality\, fermentation efficiency\, and beer quality. Prior to joining UC Davis\, he was a Senior Research Fellow at the University of Queensland’s Centre for Nutrition and Food Science in Australia from 2010 to 2019. In 2018\, he was made a Fellow of the Institute of Brewing and Distilling for his research contribution to the malting and brewing industries. Dr. Fox was part of the team that wrote the new syllabus for the Institute of Brewing and Distilling Certificate in Malting course. The tool was introduced during the 2021 Craft Malt Conference and will be made available for maltsters to use starting the week of June 21st\, 2021. \nPlease join Curtis Davenport and Andrew Caffrey on July 8th for a live demo and onboarding session to help you start using MaltVis to make the most of your malthouse data. Topics covered will include: \n\nTips for data collection and organization to prepare your data for use in MaltVis\nDemonstration of MaltVis features\nHow MaltVis can be used to gain data-backed insights into your process and products\n\nSpeakers\nCurtis Davenport co-founded Admiral Maltings in 2017 with Ron Silberstein and Dave McLean and is Admiral’s Head Maltster. Prior to opening Admiral\, Curtis grew organic fruits\, vegetables\, barley\, and wheat in Santa Barbara County\, CA. Curtis began floor malting inside a converted shipping container in 2013 and has been a member of the Craft Maltster’s Guild ever since. Curtis and his wife\, Maddie\, live in Oakland\, where they like to ride bikes\, make wine\, and eat pizza with friends. \n  \nAndrew Caffrey obtained his doctorate at the University of California\, Davis studying fermentation chemistry for beer and wine.
