SUMMARY:Insights from the 2025 U.S. and Canada Barley Crop
DESCRIPTION:Thursday\, October 23rd | 1:00 PM – 2:00 PM EST \nInsights from the 2025 U.S. Barley Crop \nThis presentation will dive into data from the USDA NASS Small Grains Summary\, paired with how markets and weather impacted the crop harvested. It will also explore the landscape of variety development and improvement\, and what maltsters can expect on the horizon.  \n\n\n\nInsights from the 2025 Canada Barley Crop \nEarly sample results suggest very good test weights and high levels of plump kernels in the 2025 malting barley crop in western Canada.  Protein levels are expected to average over 1% lower than the 13.2% recorded by the CGC in 2024* with some areas of central Alberta reporting malting barley protein between 9-11%.  Germination energy is generally very high and while there are reports of some pre-harvest sprouting in eastern Saskatchewan in particular\, it does not appear to be widespread.  Some staining is reported due to rains in early August. With respect to disease pressure\, fusarium head blight has not been a significant issue again this year with reports of limited presence of DON in some samples\, generally below 0.5 ppm.  Other diseases such as blight and blackpoint have been observed at higher levels than the past few years. \nAbout Our Speakers \nAshley McFarland \nVice President & Technical Director: American Malting Barley Association                                                                                                                     \n\nAshley McFarland serves as the vice president and technical director for the American Malting Barley Association\, a trade organization representing maltsters\, brewers\, and distillers working towards the betterment of the U.S. malting barley crop and associated industry. In her role\, she supports communications and membership efforts\, along with management of the Quality Evaluation Program\, which seeks to bring improved malting barley varieties into the supply chain. She also serves as the executive secretary for the National Barley Improvement Committee that supports barley growers\, researchers\, and industry representatives to secure sustained funding for barley research and policies that support domestic malting barley production. Previous to AMBA\, McFarland held various roles in University extension programs across four states and has worked in nonprofit executive leadership. She has a B.A. in Political Science and Environmental Studies from Central College (Pella\, IA) and an M.S. in Environmental Science from Iowa State University. McFarland\, along with her husband and two children\, reside in Duluth\, MN. \nAaron Onio                                                                                                                            Technical Maltster/Malt Academy Professor                                                                      Canadian Malting Barley Technical Centre                \n                                           \n\nAaron Onio oversees the day-to-day operations of the Canadian Malting Barley Technical Centre (CMBTC)\, a pilot malt lab that houses a 100 kg pilot malt system and micro malt unit. His primary role is to evaluate the quality and performance of both established and new Canadian malt barley varieties. He is a resident instructor at the CMBTC’s Malt Academy\, where he leads practical hands-on training and technical sessions focused on the malting process and quality assessment. Charlie has received numerous awards for his contributions to the industry and has featured extensively in the media. This multifaceted analysis not only highlights the dynamic nature of malt aging but also elucidates the nuanced way these changes manifest in the brewing process\, ultimately influencing the sensory experience of beer. \nAbout Our Speakers \nDr. Harmonie Bettenhausen \nFaculty Lecturer at the James B. Beam Institute for KY Spirits at the University of Kentucky \nDr. Harmonie Bettenhausen is a Faculty Lecturer at the James B. Beam Institute for KY Spirits at the University of Kentucky and the consulting Director of the Hartwick College Center for Craft Food & Beverage. She leads research and testing in grains\, malts\, beer\, spirits\, dough and breads. Dr. Bettenhausen earned her Ph.D. from Colorado State University\, specializing in omics-based research and biochemistry of small grains. Her publications cover topics such as metabolomics\, peppers\, wheat and chocolate. She is dedicated to providing exciting learning experiences for students and advancing research in food and beverage sciences. Dr. Bettenhausen also actively participates in industry-adjacent committees\, including the American Society of Brewing Chemists and the Master Brewers Association of the Americas\, where she contributes her expertise to advance industry standards and practices. In her dual roles\, she bridges academic theory and practical application\, benefiting both students and industry practitioners. \n  \nDr. Glen Fox  \nAnheuser-Busch Endowed Professor of Brewing Science at the University of California\, Davis \n Dr Glen Fox worked for the Queensland Department of Agriculture\, Australia\, from 1986 to 2010. After completing his PhD in 2008\, he was he was a Post- Doctoral Fellow at Stellenbosch University in South Africa during 2008 and 2009. In 2010\, he was appointed to the Senior Fellow at the University of Queensland (a global top 5 university in agriculture). In 2019\, he was appointed the Anheuser-Busch Endowed Professor of Brewing Science at the University of California\, Davis being only the 3rd Professor in the program since it started in1958. Some of his current research focuses is on starch and protein structure and their impact on grain\, malt and beer quality and how a range of ‘omics technologies can provide a deeper understanding of quality. In 2018\, he was Elected a Fellow of the Chartered Institute of Brewing and Distilling\, the oldest professional brewing society which started in 1886. In 2022\, he received the outstanding service award from the UC Davis Continued Professional Education program. Professor Fox has adjunct positions at Stellenbosch University\, South Africa\, the University of Queensland\, Australia and Nara Institute of Science & Technology\, Japan. Professor Fox has published one book\, one interactive virtual book\, and one edited book. He has 16 book chapters and over 120 peer-reviewed journal articles. He has been on numerous industry webinars and podcasts. In 2024\, Professor Fox was elected to the Craft Maltster Guild Board of Director. DESCRIPTION:HISTORY\, DIVERSIFICATION AND INNOVATION  – \nThe Coopers Brewery Story \nFamily-owned Coopers Brewery has been brewing beer in Adelaide\, Australia for over 163 years\, and although modest in size\, is the largest Australian owned brewery.  Over its operating history the brewery has faced many challenges which has prompted diversification to survive and now boasts the unique combination of ale and lager brewing\, a maltings\, malt extract and homebrew kit production and more recently the addition of whisky distilling and a world class visitor centre.  \nThis presentation will introduce Coopers Brewery and give an overview of our maltings business\, before delving into a couple of quite unique technical aspects of our operations.  Our pre-steeping set up and kiln gas reduction through waste heat scavenging.  The pre-steeping provides a quality improvement as well as the opportunity to reduce water use\, and the kiln gas reduction provides a financial benefit and improved sustainability. \nAbout Our Speaker  \nDr. Doug Stewart  \nCoopers Brewery  \nRegency Park\, Australia  \nDoug graduated from the University of Sydney with a degree in Agricultural Science and a PhD. He completed post-doctoral studies at Michigan State University and the University of Adelaide involved with starch metabolism and the impact of malt quality on beer filtration\, respectively. Doug joined Adelaide malting Company\, Coopers maltings\, in 2000 as Quality Manager and progressed to General Manager Technical undertaking a range of duties over 15 years\, including production\, research and responsibility for the technical aspects of the maltings. Doug then moved to Coopers Brewery in late 2014 as Quality Manager and subsequently moved into the position of Maltings Manager upon the completion of the $M65 maltings project. He is responsible for all aspects of procurement\, operations and sales and marketing. It will also explore the landscape of variety development and improvement\, and what maltsters can expect on the horizon.  \n  \nInsights from the 2024 Canada Barley Crop\nThe 2023 seeding\, growing and harvest season was a rollercoaster for farmers and the western Canadian grain industry.  Agriculture and Agri-Food Canada’s April 30th drought monitor report showed the entire Prairie growing region in moderate to extreme drought conditions\, however in early May the prairies received wide spread rains with moisture continuing regularly through June.  With cautious optimism in the air\, the taps turned off at the end of June and temperatures turned hot through most of the month of July\, resulting in early seeded crops in particular taking the brunt of the impact with yield and quality losses evident by early August in some regions.  As a result\, quality is highly variable in the 2024 malting barley crop in western Canada with some areas having low yields\, high protein content\, thin kernels and low test weights\, while other areas harvested barley with very good yields and quality. \n  \nAbout Our Speakers\nAshley McFarland\nVice President & Technical Director:\nAmerican Malting Barley Association \nAshley McFarland serves as the vice president and technical director for the American Malting Barley Association\, a trade organization representing maltsters\, brewers\, and distillers working towards the betterment of the U.S. malting barley crop and associated industry. DESCRIPTION:Craft Malt Month 2024 is here\, and we’re commemorating the occasion with a new single cask release. Presented by the Craft Maltsters Guild\, this annual celebration highlights the deep connection between local agriculture and craft beverages. This year\, Copperworks is donating $10 for every bottle sold to the Craft Maltsters Guild to support their mission to promote and sustain the tradition of craft malting in North America. \nSingle Cask No. 115 was crafted from a barley varietal called Alba grown in 2015 in Burlington\, Washington by Knutzen Farms and malted less than an hour away in Skagit Valley\, Washington by Skagit Valley Malting. The rest of the process (brewing\, fermentation\, distillation\, and maturation) took place in Seattle. This used bourbon cask matured for eight years and three months before being bottled at a cask strength of 120.7 proof.

DESCRIPTION:As many of us in the malting industry may have experienced\, we are not always the most visible part of the final product. Typically\, when a customer is enjoying a pint in their favorite taproom\, the first thing that catches their eye is the shiny tanks and sophisticated control systems that the brewing team has mastered. In the same way that there is more than meets the eye when crafting a delightful foamy beverage\, there’s hidden aspects of malthouse safety that might not always be obvious. In this presentation\, we will focus on combustible dust\, confined spaces\, control of stored energy\, as well as ergonomics and slips\, trips\, and falls. Through case studies\, OSHA fine records and incident statistics we will explore challenges that our industry has seen in the past and lessons learned on how to keep our team safe. Lastly\, we will discuss where we might find these hazards\, things to look out for\, and when to consult a subject matter expert. \nBy the end of this presentation\, participants will have gained new insight in areas where low frequency\, high impact incidents occur and have a better understanding of the resources available to tackle these unique challenges. \nAbout Our Speaker \nRegional Safety Manager for Rahr Corporation\, Jeremy has been with the company’s subsidiary\nGambrinus Malting since 2018. In his current role\, he oversees the safety program for two\nmalting plants\, one trucking divison and five warehousing facilities across Canada. A resident of\nVernon\, B.C.\, Jeremy is a Red Seal Electrician and worked in that field for ten years before his\nshift into health and safety. He has earned his NCSO\, CRST and ISO45001 Auditor designations\nand is a member of the Manufacturing Safety Alliance of BC Technical Advisory Committee.\nExperience in the field has given him valuable perspective on how we can make safety work for\neveryone.\nJeremy’s deep interest in craft beer led him to Gambrinus and the malting industry. DESCRIPTION:The 2024 Advanced Class in Craft Malt Production will be held February 19-22\, 2024\, at the UC Davis Mondavi Institute.  This class precedes the 2024 Craft Malt Conference happening at the same location later in the week. \nThe Advanced Class in Craft Malt Production is a four-day intensive class in craft malting technology aimed at giving startup and experienced craft maltsters\, as well as others within the craft malt supply chain\, both theoretical and practical knowledge in malting technology. \nCourse Objectives \n\nDevelop knowledge in malting barley and in its characteristics\nLearn and control the different steps of the malting process\nDetermine the defining characteristics of malt quality and the influence of processing parameters\nLearn the technology and methods used to produce craft malt\n\nProgram \n\nTheory and biochemistry of malt production\nMalting barley characteristics and influence on malt quality\nMalting steps: preparation of barley\, steeping\, germination\, and kilning\nMalting process parameters and optimization\nTesting methods for barley grain and finished malt quality\nEquipment and technology for craft malting\nCosts in the malting plant and energy savings\n\nInstructors  \nBruce French obtained a BSC in Agriculture from the University of Guelph\, Ontario\, and a Management Certificate from the Canadian Institute of Management. He has worked over 40 years in the malting industry\, training as a maltster with Canada Malting and learning the craft of making malt while working at various malting plants\, on process improvement and plant automation projects.  During his last 13 years with what was at the time\, GrainCorp Malt North American Operations he held roles in operations and malting retiring as Director of Malting and Technical services. Bruce’s responsibilities within this role included malt production quality and shipment quality for the five GrainCorp North American malt plants\, product safety\, HACCP\, production quality management systems\, process support and worldwide technical support for brewing customers. Prior to completion of full-time work\, Bruce joined Schill Malz in Germany for two years as Director of Operations\, with key responsibilities for malt quality\, optimizing and management of the malting process. Bruce was a member of the new variety malt quality evaluation committees at AMBA and the BMBRI. Bruce volunteers his time with the Craft Malting Guild technical committee. He especially enjoys passing on his extensive malting knowledge to the next generation of maltsters. \nHannah Turner is the Director of the Montana State University Barley\, Malt & Brewing Quality Lab. The lab services the MSU breeding program and industry through research\, outreach\, education\, and by providing thousands of data points each year on barley\, malt\, and beer. Hannah has degrees in Environmental Horticulture and Plant Science\, with her M.S. focusing on the genetic control of starch production in cereals. In her current role\, Hannah conducts research on important issues such as the impact of the steeping regime on malt quality\, genetic control of barley endosperm hydration\, mineral effect on terroir and malt flavor\, and method development to improve breeding program selection for malting varieties. Hannah works closely with the Guild via the Educational Committee\, as well as serving on the ASBC Technical Committee\, chairing the ASBC’s Malt Subcommittee\, and serving on the board for the Montana Brewers Association.
