SUMMARY:Copperworks Distilling Single Cask No. 115 Release For Craft Malt Month 2024
DESCRIPTION:Craft Malt Month 2024 is here\, and we’re commemorating the occasion with a new single cask release. Presented by the Craft Maltsters Guild\, this annual celebration highlights the deep connection between local agriculture and craft beverages. This year\, Copperworks is donating $10 for every bottle sold to the Craft Maltsters Guild to support their mission to promote and sustain the tradition of craft malting in North America. \nSingle Cask No. 115 was crafted from a barley varietal called Alba grown in 2015 in Burlington\, Washington by Knutzen Farms and malted less than an hour away in Skagit Valley\, Washington by Skagit Valley Malting. The rest of the process (brewing\, fermentation\, distillation\, and maturation) took place in Seattle. This used bourbon cask matured for eight years and three months before being bottled at a cask strength of 120.7 proof.

SUMMARY:Invisible Hazards of a Malthouse
DESCRIPTION:As many of us in the malting industry may have experienced\, we are not always the most visible part of the final product. Typically\, when a customer is enjoying a pint in their favorite taproom\, the first thing that catches their eye is the shiny tanks and sophisticated control systems that the brewing team has mastered. In the same way that there is more than meets the eye when crafting a delightful foamy beverage\, there’s hidden aspects of malthouse safety that might not always be obvious. In this presentation\, we will focus on combustible dust\, confined spaces\, control of stored energy\, as well as ergonomics and slips\, trips\, and falls. Through case studies\, OSHA fine records and incident statistics we will explore challenges that our industry has seen in the past and lessons learned on how to keep our team safe. Lastly\, we will discuss where we might find these hazards\, things to look out for\, and when to consult a subject matter expert. \nBy the end of this presentation\, participants will have gained new insight in areas where low frequency\, high impact incidents occur and have a better understanding of the resources available to tackle these unique challenges. \nAbout Our Speaker \nRegional Safety Manager for Rahr Corporation\, Jeremy has been with the company’s subsidiary\nGambrinus Malting since 2018. In his current role\, he oversees the safety program for two\nmalting plants\, one trucking divison and five warehousing facilities across Canada. A resident of\nVernon\, B.C.\, Jeremy is a Red Seal Electrician and worked in that field for ten years before his\nshift into health and safety. He has earned his NCSO\, CRST and ISO45001 Auditor designations\nand is a member of the Manufacturing Safety Alliance of BC Technical Advisory Committee.\nExperience in the field has given him valuable perspective on how we can make safety work for\neveryone.\nJeremy’s deep interest in craft beer led him to Gambrinus and the malting industry. SUMMARY:2024 Advanced Class in Craft Malt Production
DESCRIPTION:The 2024 Advanced Class in Craft Malt Production will be held February 19-22\, 2024\, at the UC Davis Mondavi Institute.  This class precedes the 2024 Craft Malt Conference happening at the same location later in the week. \nThe Advanced Class in Craft Malt Production is a four-day intensive class in craft malting technology aimed at giving startup and experienced craft maltsters\, as well as others within the craft malt supply chain\, both theoretical and practical knowledge in malting technology. \nCourse Objectives \n\nDevelop knowledge in malting barley and in its characteristics\nLearn and control the different steps of the malting process\nDetermine the defining characteristics of malt quality and the influence of processing parameters\nLearn the technology and methods used to produce craft malt\n\nProgram \n\nTheory and biochemistry of malt production\nMalting barley characteristics and influence on malt quality\nMalting steps: preparation of barley\, steeping\, germination\, and kilning\nMalting process parameters and optimization\nTesting methods for barley grain and finished malt quality\nEquipment and technology for craft malting\nCosts in the malting plant and energy savings\n\nInstructors  \nBruce French obtained a BSC in Agriculture from the University of Guelph\, Ontario\, and a Management Certificate from the Canadian Institute of Management. He has worked over 40 years in the malting industry\, training as a maltster with Canada Malting and learning the craft of making malt while working at various malting plants\, on process improvement and plant automation projects.  During his last 13 years with what was at the time\, GrainCorp Malt North American Operations he held roles in operations and malting retiring as Director of Malting and Technical services. Bruce’s responsibilities within this role included malt production quality and shipment quality for the five GrainCorp North American malt plants\, product safety\, HACCP\, production quality management systems\, process support and worldwide technical support for brewing customers. Prior to completion of full-time work\, Bruce joined Schill Malz in Germany for two years as Director of Operations\, with key responsibilities for malt quality\, optimizing and management of the malting process. Bruce was a member of the new variety malt quality evaluation committees at AMBA and the BMBRI. Bruce volunteers his time with the Craft Malting Guild technical committee. He especially enjoys passing on his extensive malting knowledge to the next generation of maltsters. \nHannah Turner is the Director of the Montana State University Barley\, Malt & Brewing Quality Lab. The lab services the MSU breeding program and industry through research\, outreach\, education\, and by providing thousands of data points each year on barley\, malt\, and beer. Hannah has degrees in Environmental Horticulture and Plant Science\, with her M.S. focusing on the genetic control of starch production in cereals. In her current role\, Hannah conducts research on important issues such as the impact of the steeping regime on malt quality\, genetic control of barley endosperm hydration\, mineral effect on terroir and malt flavor\, and method development to improve breeding program selection for malting varieties. Hannah works closely with the Guild via the Educational Committee\, as well as serving on the ASBC Technical Committee\, chairing the ASBC’s Malt Subcommittee\, and serving on the board for the Montana Brewers Association. DESCRIPTION:From September 22-29\, 2023\, Copperworks Distilling is celebrating Craft Malt Week! To commemorate the occasion\, they have a new special release: Copperworks American Single Malt Whiskey\, Single Cask No. 442 \nThis single cask was crafted from the Genie barley varietal grown in Reardan\, Washington\, by Coulee Hite Enterprises\, and malted less than an hour away in Spokane Valley\, Washington by LINC Malt\, a Craft Maltsters Guild member malthouse. The rest of the process (brewing\, fermentation\, distillation\, and maturation) took place in Seattle. This new American Oak cask matured for just over three years before being bottled at cask strength. 60.3% ABV. \nTasting notes: Tangerine\, damp pine forest\, custard and a familiar chewy lingonberry candy on the nose. Sweet orange\, matcha\, vanilla\, oak\, butter mints\, and bubblegum are harmonious on the palate. The finish is long and sweet with the butter mints fading into wintergreen and rounding out with a touch of grass and red berry jam on toast.

SUMMARY:[Member Webinar] The Mysteries Behind Malt Modification
DESCRIPTION:The word “modification” is in a maltster’s vocabulary on a daily basis. In simple numbers\, we interpret the malt certificate of analysis (CoA) and look at total/soluble nitrogen ratio\, wort beta-glucan\, friability\, fine/coarse difference\, and maybe diastatic power. But those numbers don’t really describe the full story of modification\, from cell wall hydrolysis to storage protein breakdown and release of bound proteins\, to the early attacks in starch granules… all driven by enzymes. In this webinar\, the deeper science behind endosperm modification will be explored. Finally\, some challenges will be presented on how the industry deals with future grain quality and making more malt with fewer inputs.⁠ \nSpeaker\nDr. Glen Fox is the Anheuser-Busch Endowed Professor of Malting and Brewing Science at the University of California\, Davis campus. His roles include teaching undergraduate brewing courses\, as well as conducting research with graduate students. His current research focus is on cereal starch structure and its impact on wort quality\, fermentation efficiency\, and beer quality. Prior to joining UC Davis\, he was a Senior Research Fellow at the University of Queensland’s Centre for Nutrition and Food Science in Australia from 2010 to 2019. In 2018\, he was made a Fellow of the Institute of Brewing and Distilling for his research contribution to the malting and brewing industries. Dr. Fox was part of the team that wrote the new syllabus for the Institute of Brewing and Distilling Certificate in Malting course. SUMMARY:[Member Webinar] Creating a Modern Heirloom Variety
DESCRIPTION:The term “heirloom barley variety” resonates with many brewers\, conjuring visions of unique beer flavors and aromas. Maris Otter is one such heirloom. A child of ‘66\, it challenges the definition of “heirloom”\, and its reputed properties are inextricably bound with terroir (it can legally be grown only under contract in England) and process (floor malting). Maltsters and farmers may not embrace the heirloom idea as wholeheartedly as brewers – unless compensated for yield penalties and process challenges. In this panel discussion\, we will describe our voyage toward creating a modern heirloom variety – the New World Otter Lontra. Panelists will share perspectives on barley and climate change\, ongoing beer sensory analyses\, pneumatic malting vs. floor malting\, and prospects for commercialization of the variety. We will leave ample time for questions and discussion. \nSpeakers\nDr. Patrick Hayes is a Professor at Oregon State University. His research team focuses on barley – in its many forms and uses. Current research areas include the development of winter and facultative habit malting barley varieties; the many facets of winter hardiness; dissection of quantitative disease resistance; characterization and utilization of genetic diversity; stimulating local barley production; development of multi-use naked barley for organic and conventional systems; exploring the contributions of barley genotype to beer flavor; and barley quality assessment. The OSU Barley Project has released 21 varieties/germplasms\, developed 24 mapping populations/panels\, distributed approximately 22 metric tons of barley seed\, published 175 papers in refereed journals\, and authored 13 book chapters. He has taught Plant Genetics to approximately 1\,400 students: most graduate with a keen appreciation for the complexity and power of genetics. He has served as Major Professor/co-Major Professor for 36 graduate students\, mentored 11 post-docs\, and hosted 24 visiting scientists from 15 countries. \nCampbell Morrissy has been in the brewing and distilling industry since 2011\, working in facilities ranging from a small mountain town brewpub to a nationally distributed craft whiskey distillery\, and currently as the Head Brewer at pFriem Family Brewers in Hood River\, Oregon. Simultaneously he is a Ph.D. Candidate at Oregon State University under Dr. Pat Hayes in the Barley World lab. His research focuses on barley genotype contribution to malt quality and malt and beer flavor. He is passionate about continuing education and is active with the Brewers Association the Master Brewers Association of the Americas. \nScott Fisk is a Senior Faculty Research Assistant with the Oregon State University Barley Breeding Program. As the research maltster and manager of all field-based operations he is involved in all aspects of the program including disease resistance\, winter hardiness\, and end-use quality\, all with the end goal of developing better barley for better beer and spirits. \n  \n  \nDarrin Culp is Superintendent of Agriculture at the University of California Agriculture and Natural Resources Intermountain Research and Extension Center (IREC) in Tulelake\, CA.  In the past two decades\, irrigation water has become a major source of contention in the Klamath Basin.  IREC has conducted numerous studies related to farming in drier conditions but is still considered an ideal location for research related to irrigated fields and vegetable crops produced in Intermountain Region.  Annually\, the center conducts around 50 research trials related to small grains\, alfalfa\, grass hay\, potatoes\, onions\, and peppermint.  His job as superintendent is to carry out the day-to-day management of these trials by planting\, applying treatments\, harvesting\, and collecting data requested by the various researchers who have trials at IREC.  Recently\, mild winter conditions have contributed to less snowpack and limited irrigation water availability has become the new normal.  Winter grains have gained a lot of interest among basin producers since they can more readily capture winter moisture compared to spring grain types.  The Klamath Basin has a long history of producing high-quality malting barley and these factors may lead to winter barley becoming a more prominent fixture in the landscape.        \nCurtis Davenport co-founded Admiral Maltings in 2017 with Ron Silberstein and Dave McLean and is Admiral’s Head Maltster. Prior to opening Admiral\, Curtis grew organic fruits\, vegetables\, barley\, and wheat in Santa Barbara County\, CA. Curtis began floor malting inside a converted shipping container in 2013 and has been a member of the Craft Maltster’s Guild ever since. SUMMARY:Near Beer\, A Celebration of Place
DESCRIPTION:The Farm to Table movement is alive and well in the beverage industry as breweries with hyper-local ethos are popping up around the country. This event is a celebration of some of those breweries who are inspired by place. \nCome taste those places at Near Beer at Harding House Brewing Company in The Nations neighborhood of West Nashville during the Craft Brewers Conference on Tuesday\, May 9 from 5 to 10 PM Central Time. The breweries pouring include Scratch Brewing Company from Ava\, Illinois\, Fonta Flora Brewing from Nebo\, North Carolina\, Fullsteam Brewery from Durham\, North Carolina\, and Free Range Brewing from Charlotte\, North Carolina. Most of the breweries participating are Craft Malt Certified™\, some of them grow their own ingredients\, and all of them engage with nearby farms to source their recipes. \n“Our unofficial industry tagline is buy local\, but craft breweries don’t always do that themselves\,” says the Co-Founder of Harding House Nate Underwood\, who spearheaded Near Beer. “We wanted to celebrate and hang out with those breweries who walk the walk. Purchasing local agricultural ingredients isn’t always easy or inexpensive\, so we’ve got to stick together.
